Culinary class dishes up monthly community breakfast

Those who have ever wondered what happens when high school students take over breakfast can wonder no more — Early Bird Café is here to prove that mornings can be “both delicious and delightfully entertaining,” said Rachel Goings, public relations specialist for Plumas Charter School. The monthly café is open to the community, and offers diners a chance to support local youth.

The café, which is run by students, is a revival of the much-loved Greenville Junior-Senior High School program. Early Bird Café is presented by PCS’s Indian Valley Academy culinary class, led by Veronica Tilton. “It’s a place where, once a month, Friday mornings become gourmet adventures (with a side of fun),” said Goings.

The café is open from 7 to 9:30 p.m. at 117 Grand St. in Greenville. Upcoming dates are Feb. 28, March 28 and April 25. The menu includes breakfast classics served fresh by enthusiastic students who are mastering the fine art of morning cuisine, says PCS.

But the real magic is the students themselves, said Goings. “Watching them work the kitchen is like seeing future Michelin-star chefs in the making — except there’s way more laughter and maybe a little less fire (we hope). They bring a mix of earnestness and energy that you just don’t get at your usual diner.”

Goings said Tilton guides her team with the wisdom and patience of a seasoned teacher. “You can tell she’s teaching them more than just cooking skills — there’s a real sense of pride and teamwork, which is served up along with every plate.”
